Topinambour (Heliantus tuberosus L.) tubers are rich in carbohydrates, insulin in particular. Different topinambour-based dietary foods are produced for patients with diabetes mellitus. Direct-phase HPLC was used to comparatively analyze the qualitative composition of free and total sugars in the topinambour tubers stored in Russia and Tajikistan. The qualitative composition of free sugars in the topinambour tubers stored in Russia and Tajikistan is equal and represented by fructose, glucose, and sucrose. The quantity of fructose in the Russian raw material is 4 times more than that in the Tajik one. That of glucose and sucrose in the Russian raw material was 5 and 2 times higher than that in the Tajik one, respectively. Topinambour tubers differ in the qualitative composition of total sugars. Carbohydrates in the raw material stored in Tajikistan are represented by 5 sugars: mannose, glucose, xylose, galactose, and arabinose. The topinambour tubers stored in Russia lack mannose. The difference in the content of total sugars in the tubers is slight.
