FATTY OILS: DETERMINATION OF THE LEVELS OF HEAVY METALS

nformational and analytical studies were conducted to determine heavy metals in the fatty oils used in medicine and food industry. Pharmacopoeias recommend calorimetry for the total determination of heavy metals and an atomic absorption method for the quantification of individual metals. The safety of fatty oils in food industry is evaluated on the basis of the respective State Standards. The quantitative determination of individual metals uses atomic emission, inversion voltammetry, and inductively coupled plasma atomic emission in addition to calorimetry and atomic absorption spectrometry.
